The Greek Trilogy of Luis Alfaro: Electricidad; Oedipus El Rey; Mojada has just been published! Wonderful reimaginings of Greek tragedies reset in LA and NYC. I saw his Oedipus El Rey and Mojada (Medea) at the Public Theatre in NYC. Luis is Mexican-American and I adore both him and his work. He teaches at USC and has also has edited some anthologies of Latinx writers.
Octavio Solis is brilliant-check out his Lydia and the volume of River plays (published by No Passport) for a great perspective on the Mexican American experience on the border. He also has a wonderful memoir, Retablos.
Speaking of No Passport Press, founder Caridad Svitch is a proflic playwright of note, winning an Obie Award for Sustained Excellence. In addition to her own plays, she has edited some anthologies and written a lot of articles for various publications.

Although I haven't read them, I've heard good things about the Floating Island Plays by Cuban writer Eduardo Machado. Other playwrights, whose work is available on the New Play Exchange (about$15 a year, if you don't know about it!), include Anne Garcia-Romero, Kristoffer Diaz, Tlaloc Rivas, Elaine Romano, Diane Burbano, Kristoffer Diaz and Migdalia Cruz.
Jose Rivera, (I like his Sueno), Nilo Cruz, (I like Anna in the Tropics) and Quiera Alegria Hudes have already been mentioned by others. And, of course, don't forget the late, great Maria Irene Fornes, inspired so many of these writers. Her classic Fefu and Her Friends was revived recently in NYC and is a new documentary about her.

Just a few plays that haven't been mentioned yet, off the top of my head ...
Anna in the Tropics by Nilo Cruz
Real Women Have Curves by Josefina López
The Elaborate Entrance of Chad Deity by Kristoffer Diaz
Water by the Spoonful by Quiara Alegría Hudes
And a list of writers ought to include the late María Irene Fornés.
