Be creative! When we did AGYG, we used fishing line, but Dolly controlled it. It was tied to her finger, so when she startled from the shot, the bird flew off her hat.
We also did a shooting trick where we lowered Annie down on a swing, and she shot balloons off of people's heads. The girls held the balloons on their heads and with each shot, popped the balloons with a straight pin that was taped to their index finger.
Annie and Frank's shooting contest was done out towards the audience. Two guys on each corner of the stage pretended to throw the discs and Annie and Frank followed them with their eyes and shot them.
All of our guns were cap guns. Loud enough in our theater for the right effect without blasting anyone's eardrums.

Fishing line from off stage should pull the bird right off. Gun shots can be made by slapping a piece of lumber on the wooden floor. It keeps the sound local to the pistol.
