I work with grades 6-8. Although we generally go for larger cast shows, I have a few suggestions that would work with 7.
There is a 50 minute version of A Wrinkle in Time that can be done with 7. I've done it with a larger cast (12), and really enjoyed it.
If they are strong, have a look at Aunt Leaf. It's really flexible (written for 3, but seems like 7 would be great), but definitely a challenge. I teach middle, and I'm hoping for a year with a strong group of 8th graders to do it someday.
Finally, written for 2m, 2f, but very flexible, and a fabulous story: The Miraculous Journey of Edward Tulane. We did it last fall - the 8th graders (who had read the book as 4th graders) absolutely loved it (and so did I).
