Two options:
1) don't even worry about it. List the shows as on any other résumé entry.
2) Put an asterisk explaining that Covid canceled the actual performance. The problem with option two is that kids all over the country had their shows ended in various stages of production. So questions may be raised by a reader such as: was the cancellation before rehearsals; during rehearsals; halfway through the run, etc.
In talking with other casting directors and producers (be they educators, community theaters, and several professionals in the industry), they are all familiar with the fact that everyone had to do with Covid cancellations over the last two years. Colleges and other professional in the business will be very understanding.
For students the important thong a resume demonstrates is that they had experience in the rehearsal and production process - regardless of whether the show actually happened. A reader of that résumé just wants to see that the kid did the prep work.

Many of them are using skills-oriented formats since Covid robbed them of other experiences. But several of them were cast and went through the rehearsal process, but never got to perform.
